Speaking of Food CIC is becoming established as a credible food and nutrition education service. The development of food and nutrition knowledge, skills and confidence using everyday foods by those in the community has helped people to manage food budgets, ensure nourishment rather than just being fed and to link food choices to physical and mental health and wellbeing. The following is a selection of activities in which Speaking of Food CIC has been involved.Seat on Foundation group of Food Solutions Network (FSN). The Foundation group steers the work of the FSN which has an emphasis on reducing food insecurity and accessing surplus food to use in food offers across the borough, which also has a positive impact on reducing food to landfill. Speaking of Food CIC has been able to highlight the importance of upholding nutrition quality while tackling food insecurity.Development of 3 recipes using store cupboard ingredients only. Speaking of Food CIC designed three recipes which used a variety of ambient ingredients such as dried, canned and those in jars which can be made in one pan on the hob in less than 15 minutes, making them also fuel efficient. These are tasty, adaptable family friendly meals costed at around £5 for at least four portions. All were suitable to be eaten without meat which is inclusive for our diverse communities. Nourishing ingredients included canned vegetables and pulses, herbs and spices aswell as ginger and garlic in squeezy tubes and deli jars of Mediterranean style vegetables. Food activities for the school summer holiday HAF scheme. More than 100 children at several venues across the borough enjoyed making and eating fruit kebabs. The message “it doesn’t only have to be fresh” was put forward in the hope that children could repeat the activity at home using also canned, frozen or dried fruit, aswell as fresh. Many children tasted some new fruit at these sessions such as cantaloupe melon, prunes and dried apricots. Some groups had a longer session when we made the noodle dish developed as one of the store cupboard recipes as above. As many children were familiar with noodles from packets and pots this homemade version was very well received as well as being more nutritious. Alleviating food and fuel insecurity during winter 2022/23. Speaking of Food CIC was granted funding from Action Together to work with 16-25 year olds, identified as one of the high risk groups. Childrens social care services offered our sessions to care experienced young adults in this age group. Young mothers and their baby’s are housed for a period of time in a local refuge and are also within this age group. They also took part in sessions to alleviate food and fuel insecurity. Aswell as cooking and tasting the meal prepared the participants also took away the same ingredients to make at least another four portions in their own time.
Stakeholders take part in our food and nutrition sessions. First sessions tend to be pre arranged while subsequent sessions are agreed among the participants. This may be to brush up on a kitchen skill or to experience using a new ingredient, for example. A ‘soft touch’ nutrition approach is taken during discussions in practical sessions to develop knowledge of food and health, and other aspects of food such as cost, variety, meal planning to suit the individual or family and their circumstances.
