Revenue Recognition
Revenue, described as turnover, is the value of food and beverages sold provided to customers during the period.
Stock
Stock has been valued at the lower of cost and estimated selling price less costs to complete and sell. In respect of work in progress and finished goods, cost includes a relevant proportion of overheads according to the stage of manufacturing/completion. Due to the perishable nature of food and drink items, stock is reviewed regularly and any obsolete, damaged or expired items are written off to the profit and loss account as incurred.
